Lime Brownies

My favorite type of lime treat is the kind in my Diet Coke, but I do like lime in almost anything. I made these for the first time last week and have had a few people asking for the recipe, so here it is. They are delicious, very delicious!

Lime Brownies
  • 1.5 cups (plus 2 Tablespoons) flour
  • 2 cups (minus 2 Tablespoons) granulated sugar
  • 1 teaspoon salt
  • 1 stick butter (softened)
  • 4 eggs
  • Zest and juice of 3 limes
Frosting
  • 8 ounces cream cheese (softened)
  • 4 tablespoons butter (softened)
  • 1/2 bag (about a pound) powdered sugar
  • Zest of 2 limes
  • Juice of 1 lime
Directions
  • Preheat oven to 350 degrees
  • Spray 9x13 pan with Pam
  • Cream together the butter, sugar, lime zest, and lime juice
  • Beat in the eggs
  • Add the dry ingredients and mix until combined
  • Pour into the greased pan, and bake for 30 minutes
  • Set aside to cool
Frosting Directions
  • Cream the cream cheese and butter together
  • Mix in the zest and juice
  • Gradually beat in the powdered sugar
  • Spread onto the cooled brownies

We Bought A House...

A few months ago we decided commuting 40 minutes each way every day and taking the toll road just wasn't worth it anymore. We LOVED (and still do) our ward and friends and it was months of debating before we finally decided we wanted dad home more. We looked at every house that came on the market and couldn't find anything we loved. We don't plan on moving for a LONG time. We found our dream neighborhood and after what seemed like a million visits to the model and lots of prayers, we decided it was where we wanted to raise our kids. We found a house that seemed to be the perfect fit and signed the papers. After 3 months of staring at a pile of dirt, progress is finally being made and we have a foundation. We are still 4 or 5 months out but we have had a great time seeing its daily progress. Picking everything out is a very tiring, but fun task. After 3 hours in the design center I probably could have asked Trevor for marble floors and he would have said yes. We can't wait til it's done and we can finally call it home. Until then, we are having fun cruising garage sales and craigslist for lots of fun furniture.

Weekend in Vail


We decided we needed a little getaway with the 3 of us so we headed up to Vail for the weekend. I always forget just how gorgeous it is up there. We had a blast going on walks, exploring Vail Village, eating good food, and eating way to much at the farmers market. Naps were had by all (daily) and lots of movies were watched and books read. I love the Swiss architecture and all of the amazing flowers everywhere you look. We already want to go back. When we told Brooklyn we had to leave the mountains, she literally kicked and screamed. I guess she is her father's daughter after all. Side note: on the way up I realized I had left the camera (I'm still furious about it) so all of these are phone pictures that don't do it justice. Oh well. Live and learn.

Brooklyn had her 1 year photos so we decided to snap a few family pictures while we were at it. I can't thank Amber Allen enough for capturing all of these milestones throughout her first year. I am in love with these pictures and so in love with the little girl in them.

Georgetown 1/2









Last weekend, we ran the Georgetown Half Marathon. We decided last minute, so we weren't as prepared as we would have liked to be but we both had a blast. My dad and sister in law ran it as well. The course was GORGEOUS (love my CO mountains) and the weather was perfect. After the race I actually thought "wow that was so much fun, I want to do it next year". That is quite the step up from usual "why the heck do I ever run races? I want to die". We went up to the mountains the night before and Brooklyn stayed with my mom in Denver. Everyone came up to meet us at the finish line. We finished the day up with some swimming in the mountains and dinner at the Chart House. All dinner rules went out the window and anything that kept them quiet was a GO! Super fun weekend. Trevor ran it in 1:42 and I ran it in 2 hours. I would call that a success.
